Unrendered beef fat cut into 1/2 inch cubes - approximately 3.5lbs.

This is a mix of fat trimmed from the cows (not exclusively suet, but likely contains suet). The fat has many applications, including being rendered into tallow. It is cubed for convenient and even rendering. With proper rendering, 3.5lbs of fat can yield at least a quart of tallow.
