I knew when I started a mission- and market-driven barbecue endeavor that the mission and the market wouldn't matter if the food didn't taste great. No one will regularly spend money on a mediocre dinner, no matter how meticulous the sourcing is. Since partnering with Grama Grass in 2023, every time I look at their brisket or chuck with that telltale golden grass-finished fat, I get excited to share it with Rang Tang's conscientious guests because I know that with only salt, pepper, and smoke, it will taste great.
